Broth assessment: this is a mild tonkotsu, possibly one of the safest and lightest versions I have tried. Pork flavor is present but controlled, and the salt level stays restrained. It does not drop below average quality, and it remains enjoyable precisely because it avoids overpowering intensity. This is ideal for diners who prefer gentle flavors and for beginners who want tonkotsu without the heavy punch.
